Egg Roll in A Bowl...

1 lb. ground turkey breast
1/4 onion
1 TBS. minced garlic
1 bag of coleslaw mix
3 TBS. soy sauce
2 tsp. rice vinegar
2 TBS. sweet chili sauce
salt and pepper to taste

Directions

Brown ground turkey then drain and set aside
Brown onion and garlic for 3 minutes and then add coleslaw mix.  Cook on medium until coleslaw is tender.  Add back in ground turkey and add in the rest of the ingredients.  Cook for a few more minutes.  My kids like to drizzle more sweet chili sauce on their bowl of food before eating.  You can serve with rice and mixed vegetables.

Turkey Lettuce Wraps...

1 lb. Ground Turkey
1/2 diced Red Pepper
Handful of Matchstick Carrots
Soy Sauce
Sweet Chili Sauce

Brown Turkey, Red Pepper, and Carrots.  When done drain any liquid in the pan.  Add soy sauce and sweet chili sauce to taste and let simmer on low for 10 minutes.  Spoon meat into romaine or green leaf lettuce, wrap and eat.

Meatballs for Meatball Subs

1 lb. extra lean turkey
1 lb. mild italian sausage
2 eggs
1/4 cup  very small diced zucchini
1/4 cup very small diced carrots
1 cup panko
onion powder, garlic powder to taste

1 TBS. italian seasoning
1/4 tsp. crushed red pepper
1 tsp. salt
chicken broth (3/4 cup+ per pan)

Mix all ingredients except broth.  Form into small meatballs and brown on all sides in oil.  Add 3/4 cup broth.  Cover, reduce heat to low.  Cook about 7 minutes (5 for smaller meatballs.)

Turkey Burgers...

1 lb. Ground Turkey Breast
Monterrey Jack Cheese
Bread Crumbs
Dry Ranch Dressing Mix
1 TBS. Extra Virgin Olive Oil

Place turkey breast in mixing bowl.  Add desired amount of above ingredients and mix well.  Make into 4 patties and grill.  Serve on a hamburger bun with a slice of tomato, lettuce, and your favorite sauce (ketchup, mustard, ranch, honey mustard, etc.).

Pumpkin Chili Mexicana...

2 tablespoons vegetable (olive) oil
½ cup chopped onion
1 cup chopped bell pepper (red, yellow, or orange)
1 clove garlic, finely chopped
1 lb. ground turkey
2 cans (14/5 oz. each) diced tomatoes, undrained
1 can (15 oz.) 100% pure pumpkin
1 can (15 oz.) tomato sauce
1 can (15.25 oz.) kidney beans, drained (I use black beans instead)
1 can (4 oz.) diced green chilies
½ cup loose-pack frozen whole-kernel corn
1 tablespoon chili powder
1 teaspoon ground cumin
½ teaspoon ground black pepper

Directions:

Heat oil in large saucepan over medium-high heat. Add onion, bell pepper and garlic; cook, stirring frequently, for 5-7 minutes or until tender. Add turkey; cook until browned. Drain.

Add tomatoes with juice, pumpkin, tomato sauce, beans, chilies, corn, chili powder, cumin and pepper. Bring to a boil. Reduce heat to low. Cover; cook, stirring occasionally, for 30 minutes.
