Raspberry Bread Pudding

Ingredients:

Bread Pudding:
3 T. softened butter
3 eggs, beaten
3 1/2 c. milk
1 pkg. frozen raspberries
2/3 c. sugar
2 tsp. vanilla
8-10 c. cubed white bread (2 inch cubes)
2 1/2 T. cinnamon/sugar mixture

Cream Sauce:
3 T. butter, melted
1/2 c. sugar
1/8 tsp. cornstarch
1 pt. whipping cream at room temperature

Directions:

Heat oven to 350 degrees.
1. Mix softened butter, sugar, eggs, vanilla, and milk to make a the custard.
2. Put the cubed bread in the bottom of a 9x13 inch pan. The pan should be very full of bread, the custard will condense it. Spread the raspberries over the bread. Pour the custard mixture over the top and sprinkle with the cinnamon/sugar mixture. You can also serve the sauce on the side or pour it over individual servings of the pudding. 
3. Bake at 350 for 45 minutes, or until well set in the middle.
4. While the pudding is baking, mix the cream sauce ingredients well. Once the pudding is done, pour the cream sauce over the hot bread pudding.
5. Serve warm.

One Hour White Bread

One Hour Bread (from Cooking Classy)


Makes 2 small loaves.
Ingredients
  • 5 1/2 cups (780g) bread flour , then more as needed
  • 3 1/2 Tbsp granulated sugar
  • 2 tsp salt
  • 1 1/2 Tbsp rapid rise yeast
  • 1 1/2 cups water
  • 2/3 cup milk
  • 3 Tbsp butter, diced into 1 Tbsp pieces
  • 2 tsp lemon juice

Instructions

  1. In a bowl or in a large liquid measuring cup combine water, milk and butter. Heat in microwave until it reaches 120 - 130 on an instant read thermometer, about 1 - 2 minutes (it's okay if butter doesn't fully melt). 
  2. Meanwhile add 5 1/2 cups flour, sugar, salt and yeast to the bowl of an electric stand mixer fitted with the paddle attachment. Mix for about 10 seconds to blend.
  3. Pour warmed water mixture into flour mixture then pour in lemon juice. Mix on a fairly low speed for 1 minute. 
  4. Scrape dough from paddle and switch to hook attachment, scrape sides of bowl. Set to a fairly low speed and let knead 4 minutes, while adding a little more flour if needed until dough consistency isn't sticky (it can stick to the bottom of bowl but shouldn't stick to the sides).
  5. Meanwhile spray two 8 by 4-inch or 8 1/2 by 4 1/2-inch loaf pans with non-stick cooking spray.
  6. Divide dough into two equal portions, and shape into logs each 8-inches long. Transfer to prepared loaf pans.
  7. Cover loaves with a large container such as a cake carrier or spray a sheet of plastic wrap with non-stick cooking spray and drape over loaf pans. Let rise until doubled in volume, about 25 minutes. 
  8. Meanwhile preheat oven to 375 degrees. 
  9. Bake in preheated oven until golden brown on top and hollow when tapped, about 22 - 25 minutes. Invert loaves onto wire racks to cool. 
  10. Store loaves in an airtight container once they are almost finished cooling.

Disneyland Cornbread

Disneyland's Sweet Cornbread Recipe

This sweet cornbread was served at Big Thunder Ranch BBQ until it closed at the end of 2015. Once you've had this cornbread, you won't ever go back to any other recipe!

Ingredients:
1 (15.25 oz) yellow cake mix
2 (8.5 oz each) Jiffy corn muffin mixes
Ingredients called for on the back of the cake mix (eggs, oil, water)
Ingredients called for on the back of the corn muffin mixes (eggs, milk)

Instructions:
Preheat oven to 350 degrees. Spray a 9x13" baking pan with non-stick cooking spray and set aside.
In a large bowl, dump in all three boxes of dry mixes (the 1 cake mix and the 2 corn muffin mixes). Add in the ingredients called for on the back of the cake mix box (usually 3 eggs, water, and oil). Now add in the ingredients called for on the back of each corn muffin mix (usually 1/2 cup milk and 1 egg per box).  Mix all the ingredients together until completely combined (but try not to over-mix). Pour batter into prepared pan and bake for 28-33 minutes or until a toothpick stuck into the center of the cake mix comes out clean.  Serve warm with butter and honey.  Serves: 16

Zucchini Bread

1 cup sugar
1 cup brown sugar
3 eggs
1 cup oil

Mix and add:
3 cups flour
1 tsp. salt
1 tsp. soda
3 tsp. cinnamon
1/2 tsp. baking soda

Mix and add:
2 cups grated zucchini
2 tsp. vanilla

Bake 350 degrees for 45 minutes.  Makes 2 loaves of bread

Bran Muffins

2 cups boiling water
5 tsp. baking soda
1 cup shortening
2 cups sugar
4 eggs
1 quart buttermilk
5 cups flour
1 tsp. salt
4 cups all bran cereal
2 cups 40% bran flakes
2 cups chopped dates (optional)
1 cups chopped walnuts (optional)

Add soda to boiling water and cool.  Cream shortening and sugar.  Add eggs, one at a time; stir in buttermilk, then add flour and salt.  Add water and soda to above mixture.  Add cereals, dates and nuts.  Spoon into well greased muffin tins.  Never stir or beat, just fold ingredients together.  Store unused mixture in refrigerator for up to 6 weeks.  Bake at 375 degrees fro 20 minutes.

Buttermilk Banana Bread

  • This is my favorite banana bread.  It comes out white, not brown-flecked.  Recipe from Mel's Kitchen Cafe.   

  • 1/2 cup butter, softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 cup mashed bananas (I use about 3 average sized bananas)
  • 4 tablespoons buttermilk (here is a guide for making your own buttermilk)
  • 1/2 teaspoon vanilla
  • 1 3/4 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon baking soda

  1. Grease and flour 1 large loaf pan (9 1/4 X 5 1/4-inch) or whatever combination of pans you'd like (several commenters have said this recipe works great made into muffins or smaller loaf pans).
  1. In a large bowl, cream butter and sugar together. Add eggs, bananas, buttermilk and vanilla until the batter is well mixed. Add in the flour, baking powder, salt and soda. Mix until well combined. Pour batter into prepared pan and bake at 350 degrees for 50-55 minutes or until a toothpick comes out clean.

NOTE:  I made this into muffins and then dipped them in melted butter and then cinnamon and sugar while they were still hot.  YUMMY!

Easy Cinnamon Bubble Bread

Easy Cinnamon Bubble Bread

Rhodes White Frozen Rolls
1/2 c. butter, melted
2/3 c. sugar
1 Tbsp. cinnamon

In a small bowl, mix together the cinnamon and sugar.  Roll each piece of frozen dough in the melted butter and then in the cinnamon sugar mixture.   Place them in a greased 9x13 metal pan, following the directions on the back of the roll package for rising.  Bake at 350 for 15-20 minutes.  Remove from oven and let cool.  Frost with your favorite cream cheese frosting.

Quick Cinnamon Rolls


3 1/2 cups warm water
3/4 cup sugar
1 cup oil
6 TBS. yeast
1 TBS. salt
3 eggs
10 1/2 cups flour
2 sticks butter-melted
1-2 cups brown sugar
Cinnamon as needed

1.  Mix water, sugar, oil, and yeast. Let sit for 15 mins.
2.  Add salt, eggs and flour. Mix well. Roll and spread with butter, brown sugar and cinnamon.
3.  Cut and let rise for 10 mins. Bake at 425 degrees for 10-15 minutes on a greased baking sheet. Glaze while warm (cream cheese frosting)

No Knead Bread

No-Knead Bread
1/4 tsp active dry yeast
1 1/2 cups warm water (I used 1 1/4...my first batch came out too soupy with 1 1/2)
3 cups all-purpose flour (I used bread flour), plus more for dusting. You may use white, whole wheat or a combination of the two.
1 1/2 tsp salt
Cornmeal or wheat bran for dusting (I just used extra flour)

Combine yeast, flour and salt, stirring until blended. Add water. The dough will be shaggy and sticky. Cover bowl with plastic wrap. Let the dough rest at least 8 hours, preferably 12 to 18, at warm room temperature, about 70 degrees.
The dough is ready when its surface is dotted with bubbles.
Preheat oven to 475 with the dutch oven in it for at least 20 minutes.  Add enough flour to form the dough into a loose ball then put into dutch oven.
Remove dutch oven and sprinkle a little flour or corn meal on the bottom and put the dough in the dutch oven with the lid.  
Cover and bake for 30 minutes. Remove the lid and bake another 5-10  minutes, until the loaf is beautifully browned. Remove the bread from the Dutch oven and let it cool on a rack before slicing.

Garlic Cheese Pull Apart Bread

Easy and delicious!  Great with Pasta!


Ingredients
  • 16 frozen white dinner rolls (Rhodes brand)
  • ½ C butter, melted
  • 1 C grated Parmesan cheese, divided
  • 1 tsp dry parsley flakes
  • 1½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp Italian seasoning
  • ½ tsp onion powder
Instructions
  1. Remove frozen rolls from freezer and loosely wrap them in plastic wrap and allow to sit at room temperature for 45 minutes.
  2. Cut rolls in half with a clean pair of scissors.
  3. Combine melted butter and seasonings together.
  4. Pour over dough and gently mix.
  5. Add ½ C of grated cheese and combine.
  6. You want each piece of dough to be coated.
  7. Line the bottom of a 9 inch springform pan with the piece of dough and then top with remaining grated cheese.
  8. Allow to rise in a warm place for 1½ – 2½ hours.
  9. Cover bottom of pan with foil to prevent butter from leaking out.
  10. Bake at 350 for 20-25 minutes or until center is completely done.

Coconut Bread

1 cup oil
2 cups sugar
4 eggs beaten
1 cup buttermilk
3 cups flour
1/2 t baking powder
1/2 t baking soda
1/2 t salt
2 t coconut extract
1 cup coconut flakes

Mix together and pour into loaf pans lined with wax paper. Bake at 325 for 1 hour 15 minutes. Remove from oven and glaze.

Glaze
1 cup sugar
1 T butter
1/2 cup water
1 t coconut extract
Boil for 5 minutes


Pour over loaves and let sit for 4 hours before removing from pan and pulling off wax paper.

Bread Sticks



1 Tbsp. yeast (I use quick rise) dissolved in 1 1/2 cup very warm water and 2 Tbsp sugar. Allow to proof. 

Add 1/2 tsp. salt and 3 cups flour. Mix thoroughly. I mix slowly using my dough hook of my KitchenAid, adding up to 1/4 cup more flour until the dough pulls completely away from the sides of the bowl. 

Knead for 3 minutes. 

Let rise 30 minutes. 

Roll into rectangle, cut in three columns, then rows. 

Melt 1/2 stick to 1 stick of butter in large cookie sheet.  

Dip one side of breadstick in butter flip over and lay down on cookie sheet.  Fill sheet tightly. Sprinkle with garlic salt and Parmesan cheese from a can. 

Let rise. Recipe says 10 minutes. I do 15 - 20 minutes. 

Bake for 30 minutes on 350. (watch these, it doesn't take 30 minutes in my oven).

Oatmeal Rolls

Ingredients:

  • 2 cups quick cooking oatmeal
  • 2 cups boiling water
  • 1 cup butter
  • 11/2 tbsp yeast
  • 2 large eggs
  • 2 tsp salt
  • 3/8 cup sugar (just under 1/2 cup)
  • 41/2 cups flour
  • 2 tbsp butter, melted

Directions:

In large bowl, measure oatmeal and pour the boiling water over the top of it. Stir slightly so all of the oatmeal is moistened. Cut butter and place on top of oatmeal mixture. Set aside until butter is melted and mixture has cooled. Sprinkle yeast on top of oatmeal mixture. Add eggs, salt, sugar and flour. Mix on low speed for 8-10 minutes. Dough will be soft and sticky but don't add more flour. Let dough rise until double in size. Roll out onto a well-floured board until dough is 1/4 inch thick. Brush with melted butter and cut with 31/2 inch round cutter. Fold each round in half, then take two rounds and fold them so the ends interlock; round edges up, folded sides down. Place rolls in regular size muffin tins that have been sprayed with nonstick spray. Let rise till double in size. Bake at 375 degrees for 10-12 minutes. Rolls should be light golden brown. If they are dark golden brown, they are overdone and will be dry.

Banana Bread...


1 c. sugar
1/2 c. crisco
1 tsp. soda
3 ripe bananas
2 c. flour
2 eggs
1/4 tsp. salt
1 tsp. vanilla
3 tbs. water
1 c. nuts (optional)

Cream crisco and sugar together.  Add eggs.  Add soda, flour and salt.  Add mashed bananas, vanilla, and water.  
Preheat oven to 375 degrees but turn to 325 degrees when you bake the bread.  I usually use this for two loaves that aren’t too big.  
Bake 30-60 minutes.

This can take a long time so I set the timer for 5 minutes to check each time.

Pumpkin Chocolate Chip Bread...

2 cups flour

2 tsp baking powder

1/2 tsp soda and 1/2 tsp nutmeg

1 tsp salt and 1 tsp cinnamon

1 cup pumpkin, 1 cup sugar

1/2 cup milk

2 eggs

1/4 cup soft butter

1 cup chocolate chips or nuts

Bake 350 for 45-55 min in a bundt pan

Zucchini Bread & Icing

3 eggs
2 cups sugar
2 cups grated zucchini
1 cup veggie oil
3 tsp. vanilla
3 cups flour
1 tsp. salt
4 tsp. cinnamon
1/2 tsp. cloves
1 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. nutmeg
1/2 tsp. allspice
1 cup chopped nuts (optional)

Mix all ingredients together. Grease 2 loaf pans and bake at 350 degrees for 50-60 minutes. Makes 2 loaves.

ICING
3 cups powdered sugar
1 cube butter
1 tsp. vanilla
1/4 cup milk
1 tsp. almond extract

Drizzle over warm bread.

I know there are a lot of zucchini bread recipes out there but this is one of the best ones I've tasted. Thanks to my friend Cassie!

The Best Cornbread

This is the best, most delicious, sweet, moist cornbread.



  • 1 Tbsp Oil
  • 1 cup milk (warm)
  • 1 egg (beaten)
  • 1/2 cup sugar
  • 1/2 cup yellow cornmeal
  • 1 cup flour
  • 2 tsp baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
1.  Mix all ingredients.  Batter will be thin.
2.  Pour into 8x8 pan.  Bake 25-30 minutes at 350 degrees. (I had to go almost 35 minutes - check for a moist crumb.)

I think honey butter is a MUST for this.... so delicious!
*Can be easily doubled and cooked in a 9x13 pan.

Easy Banana Bread...

1 box yellow cake mix
1 small package instant Banana Cream Pudding
1/2 cup water
1/2 cup oil
3 Ripe Banana, mashed
4 eggs

Mix all ingredients together.  Pour into 2 large or 4 small greased loaf pans.  Bake at 350 degrees for 40-45 minutes.  I would cook for less time if using small loaf pans.
