Cheesy Sausage and Croissant Breakfast Casserole

Cheesy Sausage and Croissant Casserole
adapted from Southern Living
serves 8 to 10

1 lb hot sausage (I used Jimmy Dean)
1 1/2 cups shredded Parmesan cheese
1/2 tsp onion powder
1 (10 to 13-oz) package mini croissants, chopped
2 cups milk
1 cup heavy cream
6 eggs, lightly beaten
2 cups shredded Gruyere cheese


Cook sausage in skillet over medium-high heat until done. Remove from skillet and drain fat.

Toss together cooked sausage, Parmesan cheese, onion powder and chopped croissants. Pour into a lightly greased 9x13-inch pan.

Whisk together milk, heavy cream and eggs. Pour over sausage mixture. Cover and refrigerate 8 hours.

Preheat oven to 350 degrees. Uncover casserole and top with shredded Gruyere cheese. Bake 45 minutes or until golden brown. Let stand 10 minutes before serving.

Hot Corn Dip (or Casserole Main Dish)

1 can whole kernel corn, drained
1 4 oz. can diced green chiles
1/2 c. diced red pepper
1 T. minced jalapeño
2 T. sliced olives
1 c. mayonaise
1 c. grated Monterey or Pepperjack cheese
1/2 c. grated fresh Parmesan cheese

Mix corn, chilies, jalapeño, olives and  red pepper in a medium bowl.  Add  mayo and stir well.  Add cheeses and stir.  Pour/spoon mixture into small casserole dish and bake at 350 until hot.  Serve with corn chips.

You can add cooked, shredded chicken to this to make it a main dish.

Spaghetti Casserole...

½ lb. Sausage or Hamburger browned
4 oz. cooked spaghetti noodles
2 beaten eggs
1/3 cup grated parmesan cheese
1 Tbs. butter
1 cup cottage cheese
½ cup chopped onion (optional)
¾ cup spaghetti sauce
½ cup shredded mozzarella

Combine 1 egg, parmesan cheese, & butter. Stir in hot spaghetti. Press into 9 in. square pan. Combine cottage cheese & egg and spread over noodles. Cook meat & drain. Stir in sauce and heat through. Spoon over noodles. Bake at 350 degrees for 20 minutes. Top with mozzarella cheese.

Poppy Seed Chicken...

4 chicken breasts
2 cans cream of chicken soup
1/2 pint sour cream
3/4 cup milk
2 cups Ritz cracker crumbs
1 T. poppy seeds
1/3 cup butter

Cook chicken, cut into cubes. Make a crust with the crackers, butter and poppy seeds. (save some to spinkle on top) Add chicken, soup, sour cream and milk. Mix well and spread over the crust. Bake at 350 for 1 hour. Serve over rice

Creamy Chicken and Biscuits...

1/2 large onion chopped
1 1/2 tsp. butter
4 cups chopped cooked chicken
1 can cream of chicken soup
1 cup shredded cheese
6 oz. cream cheese softened
3/4 cup sour cream
6 ready to cook biscuits

Saute onion in butter until tender. Combine onion, chicken soup, cream cheese, sour cream, and chicken and put in a 9x13 pan and bake at 350 for 15 minutes. Then take out and put cheese on top and then biscuits with a little cheese on top and then back in for as long as the biscuit package tells you to cook them.

***my findings...my biscuits are sometimes mushy on the bottom. I think I would bake biscuits on a separate pan and then bake casserole according to directions and take everything out and place cooked biscuits on top just before eating.
